Somewhere in the last two years the classic breakfast sidekick of toast has evolved into an entire food group. And I kind of dig it. If you didn’t know this already by the thousands of photos that appear across social media daily, now you do. Avocados in the shape of roses, fried eggs, chillies, nut and seed butters, berries and spreads, and whatever else your pantries and refrigerators contain, when placed on a humble piece of bread, can now be called breakfast, lunch or dinner. It’s funny how something so basic has become so popular, but I think we all know why. It’s one of the easiest ways to fuel up, and there are no rules. The flavor and nutrition combinations are endless and often require no actual cooking (other than the use of that toaster, of course).
If you’re like me, your ears instantly perk up when you hear about anything that involves no cooking, little clean up, packs a protein punch and constitutes as a meal. Everyone wins in that scenario. And while there are endless combinations of goodness to be dreamed up as toast toppings, the simplicity of raw almond butter spread on some high fiber carbs and then topped with sweet fruit, honey and salt is my personal favorite.
For the almond butter, I love to utilize the grinding machines in the bulk food aisle of my grocery store, but if you have a high powered blender you can make your own raw nut butters right at home with little to no effort. This combination of nutty, sweet and salty is a winner for me every time, and I love that I can tweak it depending on what I currently have on hand. Another bonus is that my kids somehow think it’s a novelty, and thus willingly gobble it up quickly and are satiated for hours. Give yourself permission to take a guilt-free break from laboring over the stove every once in awhile and go with something simple for breakfast, lunch or dinner. After all, you make the rules now, so be a daredevil why don’t you?
Almond Butter Toast with Bananas & Toasted Coconut
2 thick slices of bread
½ cup almond butter
1 medium banana
2 tbsp raw honey
¼ cup toasted coconut
½ tsp maldon flake sea salt
Toast 2 slices of bread. Divide *almond butter between the 2 pieces of toast. Drizzle each slice with 1 tablespoon honey, sprinkle with toasted coconut flakes and sea salt.
*We made our almond butter at home. We pushed 1 cup raw almonds through our Omega juicer, then added 2 tablespoons of coconut oil to make it spreadable. You can also make homemade almond butter in a food processor or high-powered blender by processing 1 cup of almonds until you get a creamy consistency. Add coconut oil 1 teaspoon at a time until desired creaminess is reached.
